It's family reunion season, and I don't know about y'all, but at ours we've always got salad. Every kind. Potato salad. Macaroni Salad. Pasta Salad. Fruit Salad. Waldorf Salad. Jello Marshmallow Salad. Chicken Salad. Enough mayo to last ya a lifetime! I must admit, though, that I'm at that stage in my life where I just don't have the time to drive down to Alabama for all these family get-togethers, and sometimes, I just get a hankerin for chicken salad. At 4'11", though, you can't justify day after day of a mayo salad -- so you know I've got an alternate! Here ya go!
2 cups cooked chicken, shredded into large pieces
2 medium avocados, diced
1 T + 1 T fresh squeezed lime juice
salt and pepper, to taste
1/4 cup thinly sliced green onion
1/2 cup finely chopped fresh cilantro (or chop it more coarsely if you prefer)
2 T plain Greek Yogurt
Optional: Black beans and corn
Dice the avocados into medium-sized pieces, mix with 1 T of the lime juice, and season avocado with salt to taste. Thinly slice the green onion and finely chop the cilantro. Mix Greek yogurt and 1 T lime juice to make the dressing. Combine all with shredded chicken.
Serve right away or chill (recommended) before serving. I eat it by itself, but can be stuffed inside pita bread or atop whole grain crackers. Enjoy!
